One Pot Pesto Pasta
This one pot pesto pasta is an easy, healthy, delicious pasta dish packed with veggies that comes together in one pot for the best kind of weeknight dinner!

Process
Boil the Pasta & the Veggies
First things first, get some salted water boiling. Since we’re gonna be adding more than just pasta here, I like to use a slightly larger pot than you’d use for pasta and add slightly more water. ALSO, make sure to use a pot that you can put a lid on.
Alright, once the water’s boiling, throw in the pasta (I use any short pasta). Cook the pasta until it’s about ¾ of the way done. Then add in the broccoli and edamame, stir, cover and cook until the pasta and broccoli are done.
Add the Pesto
Once the pasta and veggies are done, drain all but about ¼ C of pasta water, add in 2 Tbs of butter or oil along with ½ C of pesto and stir well. I love the vegan kale basil pesto from Trader Joe’s, but any pesto will do, even homemade pesto if you’re feeling ambitious!
You can add some leftover chicken or white beans, too if you’re looking for more protein!

One Pot Pesto Pasta
Ingredients
- ½ lb pasta plus ¼ C reserved pasta water
- 2 C broccoli florets fresh or frozen
- 1 C shelled edamame
- ½ C pesto
- leftover chicken or 1 can white beans optional
Instructions
- Boil a medium pot of salted water. Add pasta and cook for 6 minutes.Add broccoli and edamame to the pot and boil for another few minutes with the lid on. When the pasta and veggies are cooked, drain most of the water from the pot. Add in the pesto and chicken/beans if using, stir well and enjoy!
