Saucy Shredded Chicken Tacos

These shredded chicken tacos are one of my go to meals, especially for weeknight meals. In just one pan and 30 minutes, you’ll have juicy, saucy chicken bursting with spicy taco flavor. Easy and tasty .. what more could you want in a taco recipe?

How to Make

Step 1: Easy Stovetop Shredded Chicken

First up is the easiest stovetop chicken. All you’re gonna do is heat up a stainless steel skillet over medium heat, then add some oil, then once the oil’s hot add in chicken seasoned generously with salt and pepper. Let cook on one side for 8 minutes, then flip and cook for another 5-7 minutes. 

Once the chicken is fully cooked, take it off the heat and shred it. I usually just use my hands or two forks.

Step 2: Homemade Taco Seasoning for A Saucy Shredded Chicken Taco Filling

One the chicken is shredded, we can start building up the flavor for your taco filling. Add the shredded chicken back into the pan over medium low heat. Add in your homemade taco seasoning: garlic powder, onion powder, cumin, chili powder, oregano, salt and pepper. You can also use store bought taco seasoning if you’d prefer! 

To finish off the job and get that classic taco mix flavor, add in a bit of water along with tomato paste. 

Mix everything together well and let it simmer for a few minutes. The sauce should thicken just a little bit and then you’re good to go!

Instant Pot Instructions

You can also make shredded chicken tacos in the instant pot by adding chicken and a little bit of chicken stock or water to the instant pot, cooking on high pressure for 10 minutes. Release the pressure after 5 minutes and shred the chicken. Then turn the function to simmer, add the chicken back in along with the taco seasonings and tomato paste. Mix well and simmer until the sauce thickens a little.

Time to Load Up Your Tacos (Plus Other Serving Suggestions)

  • Tacos: tortillas, lettuce, cheese, salsa, sour cream
  • Taco bowl: serve over rice with toppings of choice
  • Chicken chili or chicken tortilla soup: add beans, canned tomatoes, rice, chicken broth, corn, plus your toppings of choice (lime, avocado, tortilla chips, shredded cheese, cilantro)
  • Nachos! Layer chips, cheddar cheese and chicken, bake and top with toppings of choice.

Saucy Shredded Chicken Tacos

Ingredients
  

  • 1 lb chicken breast
  • salt + pepper
  • 1 Tbs olive oil
  • 2 tsp each garlic powder, chili powder, cumin
  • 1 tsp each oregano, onion powder, salt
  • ½ tsp pepper
  • ½ C tomato sauce or 1/4 C tomato paste
  • 1 C chicken broth or water

Instructions
 

  • Heat a pan over medium high heat. Once hot, add 1 Tbs olive oil. Once hot, add chicken breast (seasoned generously on both sides with salt and pepper) to the pan and let cook undisturbed for about 5-7 minutes. Flip and cook for another 5-7 minutes.
    Remove the chicken from the pan let rest for 5 minutes, then shred using two forks, your hands or an electric mixer.
  • While the chicken is resting, prepare the spice mix by combining 2 each garlic powder, cumin and chili powder, 2 tsp each oregano, salt and onion powder, and ½ tsp black pepper.
  • Add the shredded chicken back to the pan along with the spice mix, the tomato sauce or paste and the water or chicken broth and mix well. Cook over medium heat for about 5 minutes, until the sauce starts to thicken a little bit and coat the chicken.
    Remove from heat and enjoy in your favorite taco meat dish!
