Vanilla Chai Latte Blondies

These Vanilla Chai Latte Blondies are my go-to fall dessert. Forget pumpkin spice lattes, vanilla chai lattes are my favorite fall drink, so of course I had to turn them into a portable, shareable, easy dessert. They’re chewy, warm with a little bit of spice, and just the right amount of sugar.

What is a Blondie?

First things first, let’s talk about what exactly a blondie is. A blondie is basically a brownie but without chocolate. It’s a chewy bar that has a deep butterscotch (basically butter and brown sugar) flavor, kinda like a chocolate chip cookie dough flavor, again without the chocolate. A chocolate chip blondie is probably one of the most popular blondie flavors/recipes, which turns out to be the flavor of a chocolate chip cookie in the shape/form/texture of a chewy brownie.

This blondie recipe, however, is a bit different. This one’s got that coveted chewy texture but with the flavor of a fall vanilla chai latte. More on that now!

The Most Underrated Fall Flavor: Chai

When it comes to fall desserts, the first thing you probably think of is pumpkin, which is my actual least fav. I get a lil sad every fall when literally all of the new recipes coming out are pumpkin based. This is a fall dessert that’s not pumpkin, not chocolate, not apple or maple (though both are great) .. it’s chai! Chai is an underrated fall flavor in my humble opinion. What is chai, you ask? What does chai taste like? It’s a warm and cozy spice blend that’s sweet yet punchy and just delicious.


Mix the Wet Ingredients

First, mix together the butter, brown sugar, egg and vanilla. Whisk it really well, we wanna get some air into those eggs to increase both the chewiness and thickness of the blondies. The brown sugar also yields the most perfect chewy blondies. 

Mix the Dry

Then fold in the flour, baking powder and salt along with the homemade chai spice and mix a little bit more.

My Homemade Chai Spice Mix

My chai spice mix is probably not traditional and definitely more geared toward a sweet dessert (plus my own tastes). It’s heavy on the cinnamon and cardamom with some ginger and nutmeg plus a hint of clove. But, I’d highly encourage you to take a little taste of the batter and adjust the spices to your taste before baking – just remember to mix well!

Bake and Enjoy

Bake the blondies in an 8×8 parchment lined or lightly oiled baking dish at 350* for about 20 mins. The edges should look dry and set while the center might still be a little wet. You can also check the center by sticking a knife in and it should come out clean if the blondies are finished. The blondies will for sure set more and get nice and chewy as they cool, so don’t wait until they look 100% set to take them out!

Serve these chai blondies warm with a scoop of vanilla ice cream or on the side with coffee or tea!

Vanilla Chai Latte Blondies

An easy fall dessert that's full of warmth and a little punch!
Servings: 9 squares

  • ½ C butter melted
  • 1 C brown sugar packed
  • 1 egg
  • 2 tsp vanilla
  • 1 C + 2 Tbs flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 tsp cinnamon
  • 1 ½ tsp cardamom
  • 1 tsp nutmeg
  • 1 tsp ginger
  • ¼ tsp cloves


  • Preheat oven to 350°F. Line an 8x8 pan with parchment paper.
  • In a medium bowl, thoroughly whisk the wet ingredients: ½ C melted butter, 1 C brown sugar, 1 egg and tsp vanilla.
  • Fold in the dry ingredients: 1 C + 2 Tbs flour, 1 tsp baking powder, ½ tsp salt, 2 tsp cinnamon, 1½ tsp cardamom, 1 tsp ginger, 1 tsp nutmeg and ¼ tsp ground cloves.
  • Bake for 20 mins or until the edges are set and dry. Let cool completely before slicing.
