Saucy Shredded Chicken Tacos
These shredded chicken tacos are one of my go to meals, especially for those busy weeknights. In just one pan and 30 minutes, you’ll have juicy, saucy chicken bursting with spicy taco flavor.

- 1 lb chicken breast
- salt + pepper
- 1 Tbs olive oil
- 2 tsp each garlic powder, chili powder, cumin
- 1 tsp each oregano, onion powder, salt
- ½ tsp pepper
- ½ C tomato sauce or 1/4 C tomato paste
- 1 C chicken broth or water
Heat a pan over medium high heat. Once hot, add 1 Tbs olive oil. Once hot, add chicken breast (seasoned generously on both sides with salt and pepper) to the pan and let cook undisturbed for about 5-7 minutes. Flip and cook for another 5-7 minutes.Remove the chicken from the pan let rest for 5 minutes, then shred using two forks, your hands or an electric mixer. While the chicken is resting, prepare the spice mix by combining 2 each garlic powder, cumin and chili powder, 2 tsp each oregano, salt and onion powder, and ½ tsp black pepper.
Add the shredded chicken back to the pan along with the spice mix, the tomato sauce or paste and the water or chicken broth and mix well. Cook over medium heat for about 5 minutes, until the sauce starts to thicken a little bit and coat the chicken. Remove from heat and enjoy in your favorite taco meat dish!
